What you’ll need

  • 175g soft butter
  • 175g golden caster sugar
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 1 tsp baking powder
  • 3 eggs
  • 200g self-raising flour
  • 50g ground almonds
  • 2 tbsp milk
  • 250g icing sugar
  • 150g soft butter
  • Zest of 1 orange
  • Juice of ½ orange
  • Fresh Berries (strawberries and raspberries)
  • 1 sprig of rosemary


  1. Cream the butter, sugar, vanilla and orange zest before adding the eggs, one at a time. Mix the flour with the ground almonds and stir into the batter. If it is not of dropping consistency then add a few tablespoons of milk. Line your loaf tin and spoon in the batter before cooking at 170 for 50-55 minutes, until a skewer comes out clean. Leave the cake to sit for 5 minutes before turning it out.

  2. Whisk icing sugar and butter with orange juice and zest, if the icing is slightly thick then add more orange juice. Top the cake with icing, berries and rosemary sprigs.
